Method
- Preheat oven to 180°C and lightly grease a baking dish.
- Chop onion and garlic, and cut chicken into bite-sized pieces.
- Heat olive oil in a pan and cook onion until soft, then add garlic and cook briefly.
- Add chicken and cook until lightly browned on all sides.
- Stir in chorizo and cook for 2–3 minutes.
- Add tomatoes, butter beans, paprika, herbs, salt, and pepper. Mix well and simmer briefly.
- Transfer mixture to baking dish and spread evenly.
- Bake for 25–30 minutes until bubbling and cooked through.
- Let rest for 5 minutes, garnish with parsley, and serve warm.
Notes
Serve with crusty bread or a simple salad. You can swap butter beans for chickpeas or add greens like spinach for variation.
