  • 400 g chicken breast or thighs cut into chunks
  • 200 g chicken chorizo sliced
  • 400 g butter beans drained and rinsed
  • 1 can canned tomatoes
  • 1 onion chopped
  • 2 cloves garlic chopped
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried herbs
  • salt to taste
  • pepper to taste
  • fresh parsley for garnish

Method
 

  1. Preheat oven to 180°C and lightly grease a baking dish.
  2. Chop onion and garlic, and cut chicken into bite-sized pieces.
  3. Heat olive oil in a pan and cook onion until soft, then add garlic and cook briefly.
  4. Add chicken and cook until lightly browned on all sides.
  5. Stir in chorizo and cook for 2–3 minutes.
  6. Add tomatoes, butter beans, paprika, herbs, salt, and pepper. Mix well and simmer briefly.
  7. Transfer mixture to baking dish and spread evenly.
  8. Bake for 25–30 minutes until bubbling and cooked through.
  9. Let rest for 5 minutes, garnish with parsley, and serve warm.

Notes

Serve with crusty bread or a simple salad. You can swap butter beans for chickpeas or add greens like spinach for variation.
