Ingredients
  

Chicken Layer
  • 2 pounds boneless skinless chicken breasts or thighs cut into bite sized pieces
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Potato and Sauce Layer
  • 4 large russet or Yukon Gold potatoes sliced 1/8 inch thick
  • 3 cups Alfredo sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk or cream
  • 2 tablespoons fresh parsley chopped, optional for garnish

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9x13-inch baking dish.
  2. Slice the potatoes into thin, even rounds about 1/8 inch thick. Set aside.
  3. In a bowl, season the chicken pieces with salt, pepper, and minced garlic.
  4. Spread a thin layer of Alfredo sauce on the bottom of the prepared baking dish.
  5. Add a layer of sliced potatoes, slightly overlapping them. Top with a portion of the seasoned chicken and spoon Alfredo sauce over the top.
  6. Repeat the layers until all ingredients are used, finishing with Alfredo sauce, mozzarella, and Parmesan cheese on top.
  7. Pour milk or cream gently around the edges of the dish to help soften the potatoes.
  8. Cover with foil and bake for 40 minutes. Remove the foil and bake an additional 15 to 20 minutes until the top is golden and the potatoes are fork tender. Ensure chicken reaches an internal temperature of 165 degrees Fahrenheit.
  9. Let the dish rest for 10 minutes before serving. Garnish with fresh parsley if desired.

Notes

For extra flavor, sear the chicken briefly before layering. You can add spinach or broccoli between layers for a vegetable boost. This dish can be assembled up to 24 hours in advance and refrigerated before baking. Add 5 to 10 extra minutes to the bake time if starting cold.
