Ingredients
  

Sloppy Joe Mixture
  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup sloppy joe sauce or tomato based sauce
  • 1 tbsp ketchup
  • 1 tsp yellow mustard
  • 1 tsp brown sugar
  • 1 cup frozen corn
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste
Toppings
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1 can refrigerated biscuit dough cut into small pieces

Method
 

  1. Preheat the oven to 375°F (190°C). Lightly grease a medium baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook for about 3 minutes until softened.
  3. Add the ground beef and cook until browned, breaking it apart with a spoon.
  4. Stir in garlic, sloppy joe sauce, ketchup, mustard, and brown sugar. Mix well until the beef is evenly coated.
  5. Add frozen corn and season with salt and pepper. Cook for another 2 to 3 minutes.
  6. Spread the sloppy joe mixture evenly into the prepared baking dish.
  7. Sprinkle 1 cup of cheddar cheese and half of the mozzarella cheese over the meat mixture.
  8. Arrange biscuit dough pieces across the top, leaving small spaces between them.
  9. Top with the remaining cheddar and mozzarella cheese.
  10. Bake for 20 to 25 minutes until the biscuits are golden and the cheese is melted and bubbly.
  11. Let the casserole rest for about 5 minutes before serving.

Notes

Use lean ground beef to prevent excess grease in the casserole. You can also add diced bell peppers, mushrooms, or jalapenos to the meat mixture for extra flavor.
