Ingredients
  

Casserole
  • 2 lb potatoes washed and thinly sliced
  • 2 cups cooked chicken or ham diced
  • 2 cups shredded cheese cheddar, Swiss, mozzarella, or a mix
  • 2 tbsp butter for richness and greasing the dish
Sauce
  • 1 1/2 cups cream or milk
  • 2 cloves garlic minced
  • 1/4 cup onion finely chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Preheat your oven to 375 degrees F. Lightly grease a baking dish so nothing sticks.
  2. Wash and thinly slice the potatoes, keeping the slices as even as possible so they cook at the same rate.
  3. In a mixing bowl, stir together the cream or milk, garlic, onion, salt, and pepper to make the sauce.
  4. Layer half of the potatoes in the baking dish. Top with half of the chicken or ham and half of the shredded cheese.
  5. Pour some of the sauce evenly over the layer.
  6. Repeat the layers with the remaining potatoes, meat, cheese, and sauce.
  7. Cover the dish with foil and bake for 40 minutes.
  8. Remove the foil and continue baking for 15 to 20 minutes, until the potatoes are tender and the top is golden and bubbly.
  9. Let the casserole rest for 5 to 10 minutes before serving so it sets nicely.

Notes

Use pre-cooked chicken or leftover ham to save time. For a lighter version, use milk instead of heavy cream. You can also add broccoli or spinach for extra color and nutrition, or make it in a slow cooker on low for about 6 hours.
