  • 4 cups frozen hashbrowns
  • 2 cups cooked chicken shredded or diced
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese divided
  • 1 onion chopped
  • salt to taste
  • black pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a large bowl, combine frozen hashbrowns, cooked chicken, cream of chicken soup, and sour cream.
  3. Add chopped onion, salt, and pepper. Mix well until everything is evenly combined.
  4. Stir in half of the shredded cheddar cheese.
  5. Transfer the mixture into the prepared baking dish and spread evenly.
  6. Top with the remaining cheese.
  7. Bake for 35 to 40 minutes until hot, bubbly, and golden on top.
  8. Let rest for 5 minutes before serving.

Notes

Use rotisserie chicken for convenience. Add vegetables like broccoli or spinach for extra nutrition. You can also substitute cream of mushroom soup for a different flavor.
