Ingredients
  

  • 1 pound ground beef
  • 4 medium potatoes thinly sliced
  • 1 small onion finely chopped
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 can cream of mushroom soup
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon oil for cooking

Method
 

  1. Preheat your oven to 375°F and lightly grease a baking dish.
  2. Heat oil in a skillet over medium heat. Add ground beef and chopped onion. Cook until browned and soft.
  3. Season beef with salt, pepper, and garlic powder. Remove from heat.
  4. In a bowl, mix cream of mushroom soup and milk until smooth.
  5. Layer half the sliced potatoes in the baking dish. Top with half the beef, then half the soup mixture, and 1 cup of cheese.
  6. Repeat the layers with the remaining potatoes, beef, soup, and cheese.
  7. Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes until cheese is bubbly and golden.
  8. Let casserole rest for 10 minutes before serving.

Notes

Thinly slicing the potatoes helps them cook evenly. For extra flavor, try adding mushrooms or bell peppers between layers. This dish can also be assembled ahead of time and refrigerated or frozen before baking.
