Ingredients
  

Cheese Straw Dough
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp paprika optional, for color
  • 1/4 tsp cayenne pepper optional, for heat
  • 1/2 cup unsalted butter cold, cut into small cubes
  • 2 cups sharp cheddar cheese shredded
  • 2 to 3 tbsp cold water as needed

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, salt, paprika, and cayenne in a large bowl.
  3. Add cold butter cubes and blend with fingers or a pastry cutter until the mixture resembles coarse crumbs.
  4. Stir in shredded cheddar cheese evenly.
  5. Add 2 tablespoons cold water and mix until dough begins to come together. Add more if necessary.
  6. Form dough into a disk, wrap and chill for 20 minutes.
  7. Roll dough to 1/4-inch thickness. Cut into 1/2-inch strips.
  8. Twist each strip and place on prepared baking sheet.
  9. Bake for 12 to 15 minutes or until golden and crisp. Cool on a wire rack.

Notes

  • Use cold butter for flakiness and don’t overwork the dough.
  • Try adding garlic powder or herbs for variety.
