  • 1 can black eyed peas drained and rinsed
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tbsp olive oil or butter
  • 1/4 cup broth or water
  • salt and pepper to taste

  • vinegar or lemon juice for brightness

Method
 

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic. Sauté until soft and fragrant, about 3 to 4 minutes.
  2. Drain and rinse the black eyed peas. Stir them into the skillet and cook for 2 minutes to warm through.
  3. Add smoked paprika, salt, and pepper. Pour in 1/4 cup of broth or water. Simmer for 5 minutes to blend flavors.
  4. Taste and adjust seasoning. Add a splash of vinegar or lemon juice if desired. Serve warm.

Notes

  • For a heartier dish, add diced beef bacon.
  • To keep it vegan, use vegetable broth and olive oil.
