- Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic. Sauté until soft and fragrant, about 3 to 4 minutes.
- Drain and rinse the black eyed peas. Stir them into the skillet and cook for 2 minutes to warm through.
- Add smoked paprika, salt, and pepper. Pour in 1/4 cup of broth or water. Simmer for 5 minutes to blend flavors.
- Taste and adjust seasoning. Add a splash of vinegar or lemon juice if desired. Serve warm.
Notes
- For a heartier dish, add diced beef bacon.
- To keep it vegan, use vegetable broth and olive oil.
- Store leftovers in an airtight container in the fridge for up to 4 days.
