  • 2 large russet potatoes
  • 1/2 lb shrimp medium, peeled and deveined
  • 2 tbsp butter
  • 1 tbsp Cajun seasoning
  • 1/2 cup cheddar cheese shredded
  • 1/4 cup sour cream
  • 2 green onions sliced

Method
 

  1. Preheat oven to 400°F (200°C). Scrub potatoes, prick with fork, rub with olive oil and salt. Bake 45–50 minutes until tender.
  2. While potatoes bake, melt butter in a skillet over medium heat. Add shrimp, sprinkle with Cajun seasoning. Cook 2–3 minutes per side until pink and cooked through. Set aside.
  3. Once potatoes are cool enough to handle, cut lengthwise and fluff insides with a fork. Mix in sour cream and shredded cheese.
  4. Top each potato with cooked shrimp and drizzle with remaining butter from skillet. Sprinkle with more cheese and sliced green onions.
  5. Return to oven for 10 minutes, until cheese is melted and bubbly. Serve hot.

  • Try sweet potatoes for a different twist.
  • Add bacon bits or ranch for extra richness.
  • These can be prepped ahead and reheated just before serving.
