  • 2 cups fresh tomatoes diced, Roma or cherry
  • 2 cloves garlic minced
  • 1/4 cup fresh basil chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • shaved Parmesan optional, for topping
  • toasted baguette slices or crackers for serving

Method
 

  1. Dice the fresh tomatoes into small, even pieces.
  2. In a medium bowl, combine tomatoes, garlic, and basil. Drizzle with olive oil and balsamic vinegar.
  3. Season with salt and pepper. Gently toss everything until evenly coated.
  4. Let the mixture rest for at least 10 minutes to allow flavors to meld.
  5. Spoon into a shallow dish. Top with shaved Parmesan if desired and serve with toasted baguette slices or crackers.

Notes

  • To make it more filling, serve over whipped ricotta or cream cheese.
  • Try it on grilled chicken or pasta salad.
  • It can be prepared a day in advance just wait to add balsamic vinegar until serving.
