Ingredients
  

Nachos Base
  • 1 bag tortilla chips thick and sturdy
Bean Mixture
  • 1 can black beans drained and rinsed
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup diced tomatoes
  • 1/4 cup red onion finely chopped
  • 2 tbsp fresh cilantro chopped
  • 1/2 cup sour cream or yogurt
  • 1 avocado sliced or mashed
  • 1 lime cut into wedges

Method
 

  1. Preheat the oven to 375°F (190°C). Spread tortilla chips evenly on a baking tray.
  2. Heat olive oil in a pan over medium heat. Add garlic and cook until fragrant, about 30 seconds.
  3. Add black beans, cumin, chili powder, and salt. Cook for 3 to 5 minutes until warmed through and slightly thickened.
  4. Spread the seasoned beans evenly over the tortilla chips.
  5. Sprinkle shredded cheese evenly over the top.
  6. Bake for 8 to 10 minutes until the cheese is melted and bubbly.
  7. Remove from oven and top with tomatoes, red onion, cilantro, avocado, and a squeeze of lime.
  8. Serve immediately with sour cream on top or on the side.

Notes

Use thick tortilla chips to prevent sogginess. Avoid overcrowding the tray for even cooking. You can customize toppings with jalapenos, corn, or olives for extra flavor.
