  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 1 cup canned diced tomatoes drained
  • 1 cup corn kernels
  • 1 cup black beans rinsed and drained
  • 1 cup cooked rice
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • salt and pepper to taste
  • fresh cilantro for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until soft and translucent.
  2. Add minced garlic and cook for about 30 seconds until fragrant.
  3. Add the ground beef. Break it apart with a spoon and cook until fully browned and no pink remains.
  4. Drain excess fat if necessary. Stir in taco seasoning and mix well to coat the beef evenly.
  5. Add diced tomatoes, corn, black beans, and cooked rice. Stir until everything is evenly combined.
  6. Let the mixture simmer for about 5 minutes to allow the flavors to blend together.
  7. Sprinkle shredded cheese evenly over the top. Cover the skillet and cook on low heat until the cheese is fully melted.
  8. Remove from heat and garnish with fresh cilantro before serving.

Notes

For extra flavor, squeeze fresh lime juice over the skillet before serving. You can also add jalapenos for heat or swap the rice with crushed tortilla chips for a fun twist. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months.
