Ingredients
  

Beef Filling
  • 1 pound ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup frozen peas and carrots
  • 1 cup corn kernels
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
Topping
  • 4 cups mashed potatoes warm and creamy
  • 1 cup shredded cheddar cheese

Method
 

  1. Preheat oven to 375 F. Lightly grease a baking dish and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 3 minutes until soft.
  3. Add minced garlic and ground beef. Cook until browned and no longer pink. Drain excess grease if needed.
  4. Stir in tomato paste, Worcestershire sauce, salt, and pepper. Mix well to coat the beef.
  5. Add beef broth, peas, carrots, and corn. Simmer for 5 to 7 minutes until slightly thickened.
  6. Spread the beef mixture evenly in the prepared baking dish.
  7. Spoon warm mashed potatoes over the beef and spread gently to cover completely.
  8. Sprinkle shredded cheddar cheese evenly over the potatoes.
  9. Bake for 20 to 25 minutes until golden and bubbling around the edges.
  10. Let rest for 5 minutes before serving.

Notes

For extra flavor, add a splash of soy sauce or a pinch of smoked paprika to the beef mixture. You can substitute ground turkey for beef if preferred. Make ahead and refrigerate up to 24 hours before baking, or freeze tightly wrapped for up to 2 months.
