Ingredients
  

Chicken Filling
  • 3 cups shredded cooked chicken rotisserie or baked chicken breast
  • 1 cup barbecue sauce your favorite smoky blend
  • 1 small red onion finely chopped
  • salt to taste
  • black pepper to taste
Topping
  • 1 cup shredded mozzarella cheese
  • 1 can refrigerated biscuit dough 8 count
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 375 degrees F and lightly grease a 9 by 13 inch baking dish.
  2. In a large bowl, combine the shredded chicken, barbecue sauce, chopped red onion, salt, and black pepper.
  3. Spread the chicken mixture evenly in the prepared baking dish and sprinkle mozzarella cheese over the top.
  4. Separate the biscuit dough and cut each biscuit into quarters. Arrange the pieces evenly over the cheese layer.
  5. Bake uncovered for 25 to 30 minutes until the biscuits are golden brown and cooked through.
  6. Remove from the oven and let rest for 5 minutes. Garnish with chopped parsley and serve warm.

Notes

Use rotisserie chicken for quicker prep. You can assemble the dish up to one day ahead and refrigerate before baking. For extra flavor, try adding corn, black beans, or a spoonful of cream cheese to the filling.
