  • 1 package beef little smokies mini sausages
  • 1 pound bacon regular cut, not thick-cut
  • 3/4 cup brown sugar
  • toothpicks for securing bacon

Method
 

  1. Preheat your oven to 400°F and line a baking sheet with foil or parchment paper for easy cleanup.
  2. Cut each bacon strip into thirds. Wrap each Little Smokie with a piece of bacon and secure it with a toothpick. Place seam-side down on the baking sheet.
  3. Sprinkle a generous layer of brown sugar over the top of the wrapped smokies.
  4. Bake for 20 to 25 minutes until the bacon is crisp and the sugar has melted into a golden, sticky glaze. For extra caramelization, broil for 1 to 2 minutes if desired.

Notes

  • Make ahead by wrapping the smokies and refrigerating them overnight.
  • Bake just before serving. For variation, try adding a pinch of cayenne, using maple syrup, or swapping for turkey bacon.
  • Serve with mustard or BBQ sauce for added flavor.
