Ingredients

  • Bone-in turkey breast 5 lb
  • Olive oil 1½ tbsp / 22 ml
  • Sea salt ½ tsp
  • Black pepper ½ tsp
  • Fresh rosemary 1 tbsp chopped
  • Fresh thyme 1 tbsp chopped
  • Garlic 10 cloves, peeled and coarsely chopped

Method

  1. Preheat air fryer to 350°F (177°C) for 5 minutes.
  2. Pat turkey breast completely dry with paper towels.
  3. Rub olive oil all over the turkey, both skin and underside.
  4. Sprinkle salt, pepper, rosemary, and thyme over the entire turkey.
  5. Lift the skin and tuck chopped garlic underneath, spreading evenly.
  6. Scatter any remaining garlic on top of the skin.
  7. Place turkey skin side down in the air fryer basket.
  8. Air fry for 25–30 minutes, then flip turkey skin side up.
  9. Continue air frying for another 25–30 minutes until skin is deep golden and crispy.
  10. Check internal temperature in thickest part; it should read 165°F (74°C).
  11. If not done, air fry in 5-minute increments and check again.
  12. Let turkey rest on a cutting board for 5 minutes before slicing.

Notes

  • Use a probe thermometer to ensure the turkey reaches 165°F (74°C) in the thickest part.
  • Pat the turkey completely dry before oiling—wet skin won't crisp.
  • Swap rosemary and thyme for sage, oregano, or Italian seasoning (2 tbsp fresh or 2 tsp dried).
  • Add lemon zest and thin lemon slices under the skin for a citrusy twist.
  • Store leftovers in an airtight container in the fridge for up to 4 days; reheat gently in a 300°F oven with broth.
