Ingredients
  

Beef Filling
  • 1 lb ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 cups frozen mixed vegetables
  • 1 cup beef broth
Topping
  • 2 cups mashed potatoes
  • 2 tbsp butter
  • 1 cup shredded cheese

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Brown the ground beef in a large skillet until no longer pink. Drain any extra fat.
  3. Add chopped onion and garlic to the skillet. Cook for 3 to 4 minutes until soft and fragrant.
  4. Stir in the frozen vegetables and beef broth. Simmer for about 5 minutes until slightly thickened.
  5. Spread the beef mixture into a baking dish. Spoon mashed potatoes over the top and smooth out evenly.
  6. Dot the top with butter and sprinkle with shredded cheese. Bake for 10 to 12 minutes until golden and bubbling.
  7. Let rest for a few minutes before serving. It will thicken slightly as it cools.

Notes

Use sweet potatoes for a fun variation, or add Worcestershire sauce for extra depth. You can also prepare it ahead and refrigerate until ready to bake. It freezes well too!
