Method
- Preheat your oven to 400°F (200°C).
- Brown the ground beef in a large skillet until no longer pink. Drain any extra fat.
- Add chopped onion and garlic to the skillet. Cook for 3 to 4 minutes until soft and fragrant.
- Stir in the frozen vegetables and beef broth. Simmer for about 5 minutes until slightly thickened.
- Spread the beef mixture into a baking dish. Spoon mashed potatoes over the top and smooth out evenly.
- Dot the top with butter and sprinkle with shredded cheese. Bake for 10 to 12 minutes until golden and bubbling.
- Let rest for a few minutes before serving. It will thicken slightly as it cools.
Notes
Use sweet potatoes for a fun variation, or add Worcestershire sauce for extra depth. You can also prepare it ahead and refrigerate until ready to bake. It freezes well too!
