Ingredients
  

Sandwich Filling
  • 16 cooked meatballs
  • 2 cups marinara sauce store-bought or homemade
  • 4 sub sandwich rolls
  • 1 1/2 cups shredded mozzarella cheese
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tbsp fresh parsley chopped
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper or to taste

Method
 

  1. Slice the sub sandwich rolls lengthwise without cutting all the way through.
  2. Lightly brush the inside of each roll with olive oil.
  3. Warm the marinara sauce in a medium saucepan over medium heat. Add the cooked meatballs and stir gently so they are coated.
  4. Let the meatballs simmer in the sauce for 8 to 10 minutes so the flavors blend. Stir in the garlic powder, Italian seasoning, salt, and pepper.
  5. Place the open sandwich rolls on a baking tray and toast them in the oven for 3 to 4 minutes until lightly crisp.
  6. Spoon several saucy meatballs into each toasted roll, then top with shredded mozzarella cheese.
  7. Return the sandwiches to the oven for 2 to 3 minutes until the cheese is melted.
  8. Finish with fresh parsley, slice in half, and serve warm.

Notes

Use frozen cooked meatballs, store-bought marinara sauce, and pre-shredded cheese to save even more time. You can also add sliced bell peppers or onions, swap mozzarella for provolone, or press the sandwich like a panini for a crisp finish.
