Ingredients
  

Chicken Bites
  • 1 pound boneless skinless chicken thighs cut into bite size pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon butter
  • fresh parsley for garnish, optional

Method
 

  1. Pat the chicken pieces dry with a paper towel to help them brown instead of steam.
  2. Place the chicken in a bowl. Add olive oil, garlic powder, paprika, Italian seasoning, salt, and pepper. Toss until coated.
  3. Heat a large pan over medium high heat. Add butter and let it melt and foam lightly.
  4. Add the seasoned chicken in a single layer. Do not overcrowd the pan.
  5. Let the chicken cook without moving for about 3 minutes to form a golden crust.
  6. Stir the chicken and cook for another 4–6 minutes until fully cooked and lightly crisp.
  7. Turn off heat. Garnish with parsley if using and serve immediately.

Notes

Do not overcrowd the pan to ensure the chicken browns properly. Let chicken come to room temperature before cooking for even results. Chicken breasts can also be used  just reduce cook time slightly.
